Today I find myself in Gatineau, Quebec at an old fashioned surgar shack. The Sucrerie du Terroir is a beautiful little maple syrup farm just outside Gatineau. It was a brisk cool winter's day as I walked around the farm. All around the farm activity bussles as horse drawn sliegh rides through the woods are given. The buckets are hung from the trees to collect the sap... and when no ones is looking, I tried some. A sugary water that is boiled down to make the sweet maple syrup that we all know.
